Gluten-Free Muffins

Welcome,

     Our goal with our gluten-free recipes is to bring you country homestyle recipes that have been adapted from our family favorites into our gluten-free variation. We started this journey over 20 yrs ago when my family was diagnosed with a gluten and grain allergy as well as milk, nut, and egg allergies. After many years of testing feed and raising livestock, we have learned that if we feed our animals gluten-free then those with gluten allergies can in turn eat that meat or eggs. Blueberry Muffin Recipe

Sift the following ingredients in a separate bowl.

1 cup Brown rice flour

¼ cup Tapioca Flour

½ cup all purpose GF flour

¼ cup sugar

2.5 tsp baking powder

¾ tsp salt

Mix your wet ingredients first then combine with dry ingredients

1 beaten egg

¾ cups milk or milk alternative

1/3 cup oil or melted butter

Add water to make the batter thinner if to thick

1 cup of blueberries add blueberries last

Mix all ingredients in bowl. Add water as needed. Should have the consistency of muffin dough.

Bake 400F for 20-25 minutes or until golden brown.
